John Joe and his wife Veronica started their egg production business in 1988 with 300 laying hens, and delivered the eggs produced to local retail outlets in County Monaghan. In 1999, using the experience gained in producing quality free range eggs, they saw that the future market direction was in organic egg production. The small family run and owned business has grown significantly over this period, and now employs 15 members of staff. Veronica and John Joe have 20 years experience with the management of hens in an egg production environment and pride themselves in being the very first organic egg producer and packer in the whole of Ireland.
The chicks are purchased as day olds, and then reared on our rearing farm until they are 16 weeks olds. During this period we have total control and traceability of the chickens, their environment and their feed. The chicks are then transferred to our production hen houses, where they begin to lay their first eggs at around 20 weeks old.
The birds are fed on an Organic diet. The hens in the production hen house have full access to verandas and fresh green pastures, where they are free to forage, roam and dust bathe. The welfare of the hens is to a very high standard.
The eggs are collected and delivered into the grading store daily, where they are graded into different categories. Candling is carried out in the candling booth of the grading machine by trained personnel, and is the process of visually checking each individual egg for the presence of defects. All non-conforming eggs are segregated and labelled class "B" eggs.
Grading consists of weighing each individual egg and segregating it into a size range, from Very Large, Large, Medium to Small. Grading is performed on all eggs, which have passed the candling operation. All eggs are marked with the Quality Assured Mark and the Best Before Date. The eggs are then packed against customer orders ready for dispatch.
Internal egg quality testing is carried out on eggs to ensure a high quality product.

Connolly's Organic Eggs have a technical poultry adviser on hand. The company is approved under the Bord Bia egg quality assurance scheme, the Department of Agriculture and Food, and by the Organic Trust.
